Ordinarily, the harvesting period for fresh morels in the southern regions of our country (just like sichuan)commences around the beginning of March and persists until the middle of April. Owing to the genial and moist climate prevalent here, morels exhibit relatively rapid growth rates. This climatic advantage renders this area a principal harvesting area during the early spring months. Subsequently, turning our attention to the northern regions, exemplified by Gansu and Shanxi provinces. The harvesting time in these areas arrives somewhat later. Generally, it initiates from the early part of April and stretches through to the middle of May. In the northern locales, the springtime temperature ascends at a more leisurely pace. As a consequence, the growth cycle of morels is comparatively lengthier. Ultimately, when considering the high – altitude regions such as Tibet and Qinghai, the harvesting time is the most delayed. It customarily commences in the early days of May and endures until the early part of June. Given the lower temperatures characteristic of high – altitude zones, the growth season for morels is relatively abbreviated.
